Lemon and Cashew balls

I try my hardest to eat well while I am at work, but the inevitable hunger always strikes at about 3 pm. And I get my self into a state where I could pretty much whatever is placed in front of me…which 9 times out of 10 is unhealthy! So I decided to take things into my own hands and come prepared and bring healthy snacks!!

These lemon and cashew balls from the Fearne Cotton cookbook are great, they are sweet enough to satisfy a sugar craving while being filling enough not to eat the whole batch in one go. To top that off, they are so simple to make. All you need is:

  • Food processor
  • 100g raw unsalted cashews
  • 10 pitted dates
  • Zest of a lemon
  • 2 tbsp desiccated coconut
  • 1 tbsp chia seeds
  • small pinch of sea salt

You simply add it all to the food processor and blitz it! The book says to shape them in to balls (the measurements should make 18-20 balls, but i’m a fatty and normally make 10!)
