Dairy Alternative

When it comes to dairy products, I am actually a little fussy. I don’t like many cheeses – just a taste thing and Im not a big fan of cream. So when St Helens got in touch I was really excited to try out some alternative dairy products.

St Helens is a small farm that was founded in 1986, when they discovered that goats milk was a perfect alternative for people who cannot tolerate cows milk. The farm began by milking 500 goats and soon started supplying customers such as Waitrose and Hillards with, initially, a blend of sheep and goats’ milk yogurts. They now produce a range of milks, yogurts, cheeses, cream and ice cream. 

The lovely people there sent me a hamper full of their goats milk products to try. They sent me:

  • Whole, semi-skimmed and skimmed cartons of fresh goats milk
  • Natural and fat free yogurts
  • Flavoured yogurts
  • Goats butter
  • Mild goats cheese
  • Mature goats cheese
  • Spreadable goats cheese
  • A really cute TY beanie baby goat teddy
  • Two chine Goatee mugs

It was an amazing hamper and I really can’t wait to try it all. Watch this space as I will be writing up all the recipes I try with the products. 

Spicy Nuts

I love a good snack and if you know me, will often seen me nibbling away on some healthy treat. But I do find it hard to get a savoury healthy snack that i can make myself. Which is why I really love these spicy nuts from Fearne Cottons “Cook Happy Cook Healthy”. 

Spicy Nuts
Serves 4
Really tasty but a little spicy savoury snack.

Ingredients
  1. 400g nuts (You can use whichever you like the best - I used cashews, almonds and pecans)
  2. 1 tbsp coconut oil
  3. 3 tbsp coconut sugar
  4. 1 1/2 tsp sea salt
  5. 1 tsp smoked paprika
  6. 1 tsp ground cumin
  7. 1/4 tsp cayenne pepper
Instructions
  1. Heat the oven to 200 degrees
  2. Roast the nuts on a baking tray for around 5 minutes or until they turn a nice golden brown colour. Make sure you watch these as they can burn pretty quick.
  3. Meanwhile heat the oil in a pan and add the spices, sugar and salt until the sugar melts.
  4. Add the nuts to the spice mixture and mix until they are completely coated.
  5. Remove from the heat and leave to cool and serve.

Protein World Overnight Oats

With the 30 day challenge, I received a nice little booklet with a meal and workout plan for the following 4 weeks. Some of the meal ideas in it looked and sounded really good. One that I particularly like the sound of was Peanut butter overnight oats.

Ingredients
  1. 1/2 Cup of Oats
  2. 1/2 Cup of Almond Milk
  3. 1 Tbsp Peanut Butter
  4. 1 Tbsp of Chia Seeds
  5. 1 Scoop of protein powder
Instructions
  1. Add the oats, milk, peanut butter and chia seeds into a container and mix well. Leave to stand for about 6 hours or overnight if you can wait that long.
  2. When you are ready to eat the oats, stir in the protein and add some fruit if you fancy.
Notes
  1. I like to use an old jam jar or peanut butter jar to mix this in! It makes it so easy just to put the lid on and shake.

Smoothie Bowls

If you are Instagram, and lets be honest – who isn’t?! You would have undoubtedly seen a smoothie bowl, and as the name suggests it is a bowl full of smoothie! The main difference is that its a little thicker and you have the space to decorate it really pretty with all sorts of fruits, berries, nuts and whatever else you want to top it with.

I am a massive fan of a smoothie, so thought I would give a smoothie bowl a go. My version included:

Ingredients
  1. 1 Banana
  2. 1 handful of berries (I think I used blueberries and raspberries)
  3. 1 tsp of acai powder
  4. Splash of coconut milk
  5. Half a tin of peaches
  6. 1 scoop of vanilla protein

All i did was whack it in my blender and blitz it for a few minutes and then pour it in a bowl. Next is the pretty bit…

I topped mine with chia seeds, peach slices and some blueberries, again this is when you can really let loose with your creativity.

Whatever you add to your smoothie mix, just remember to make it a little thicker so you can eat it with a spoon.

Protein pancakes

Protein Pancakes

Do you ever set your alarm early to get something sorted and then regret that decision the second the alarm goes off? Well that is exactly how I felt on Tuesday morning. I had it in my head that it was a good plan to wake up early and make some protein pancakes!

So the alarm went off at 6 and I thought I had turned the alarm off, but it turns out I had snoozed it! (Never done this before!!) And I think I took this as a sign that I needed to get out of bed and get making them – it was a great move I have to say!

I am a massive fatty when it comes to food, and love to try new things and these protein pancakes are a great option for breakfast. All you need is:

Ingredients
  1. 1 banana
  2. 1 scoop (30g) of protein powder I used some Herbalife Rebuild Endurance Vanilla but any would work
  3. 1 egg
  4. 25g rolled oats
  5. 1 tbsp coconut oil
  6. Handful of berries
Instructions
  1. Add all ingredients, except coconut oil and berries to a blender and blend until smooth.
  2. Heat the pan on a medium heat, add the coconut oil.
  3. Pour a small amount into the pan and wait until cooked and then flip.
Notes
  1. I like to pile the pancakes up and then cover them in honey, yogurt and sprinkle with the berries - but you can serve them however you like.
